We first met Lauren and Peter when we got turned onto their restaurant Wax Paper. Like all savage beasts, our nature requires that we eat a whole lot of food. But, because we are also tender, intuitive, creatives–with an often daunting burden of discernment–we gravitate to places that provide something deeper than mere calories. At Wax Paper you can find copious servings of nourishment packaged as some of the most creative and enrapturing sandwiches imaginable. After one visit we were hooked, and after 2 visits we felt like regulars. We can't give enough praise to the brilliant establishment of contemporary nourishment that is Lauren and Peter's Wax Paper. 2.) Where are you from?

From the wonderfully windy Antelope Valley.

3.) Where do you live?

Currently live in Silver Lake with my beautiful wife Lauren.

4.) 3 reasons why your life in your city couldn’t happen anywhere else?

We are close to family and friends here

We have all our professional network here

The farms and ingredients available here in SoCal are world class, and it only serves to make our food better.

5.) What kind of work do you do?

Owner / operator/ employee facilitator / errand boy at Wax Paper, a small neighborhood sandwich shop.

6.) What keeps you inspired?

Other cooks and restaurants keep me inspired. The business and customers keep pushing me into the future, and compel me to stay inspired.

7.) Where do you work? 

We work in a small, close knit shop that smells of pickles, bread, and coffee. Imagine the feeling you get by doing something rewarding for another person. That’s what the shop is like.

8.) What is 1 challenge that has defined you for at least one chapter of your life?

The biggest challenge that has defined me for a chapter is opening Wax Paper and putting all our eggs in that one basket. Not having a back up plan.

9.) What are some of your favorite snacks, and do you eat them while you work?

I eat gummy candy like it’s going out of style. And yes, at work.

10.) If you had the power to be extremely persuasive, and you were invited to a presidential dinner, what kind of food allergy would you persuade everyone to believe you had?

I would be allergic to moisture. Or flavor. Just saltines for me.
